Fig fruits contain high dietary fiber, phenolic compounds and minerals. Although there are many black figs varieties in Turkey, studies related to drying of colored figs scarce. In this study, 9 black colored figs varieties and standard fig varieties (Sarilop and Sarizeybek) from Fig Research Institute were dried, and quality parameters of dried fruits were investigated. The drying was conducted on trays by classical sun-drying. The results of this work clearly showed the suitability of black colored varieties with code number 1101, 1102 and 1012 for sun-drying.en_US
