Basic strategies and testing methods to develop effective edible antimicrobial and antioxidant coating

This chapter aimed at discussing basic strategies and testing methods applied in development of effective antimicrobial and antioxidant coatings using edible materials and natural active compounds. The active edible coatings provide a unique opportunity to control microbial and oxidative changes in minimally processed and ready-to-use food products. However, the formulation of an effective antimicrobial and antioxidant edible coating by use of natural components is really a challenging process that needs using a smart strategy and step-by-step monitoring of film’s active properties using suitable testing methods. This chapter includes basic strategies and critical information in formulation of edible coatings, in choosing suitable materials and active agents for different cases, and in conducting classical and custom testing methods to evaluate performances of developed coatings.
